Delicious coconut vanilla macaroons made with gluten-free flour for a tasty and allergen-friendly dessert.
Ingredients:
  • 5.5 cups unsweetened shredded coconut
  • 0.66666668653488 cup gluten-free all-purpose flour
  • 0.5 teaspoon sea salt
  • 20 fluid ounces coconut milk
  • 0.5 cup honey, or more to taste
  • 2 teaspoons vanilla extract
  • 1 cup vegan dark chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper.
  • In a large bowl, mix together coconut, flour, and sea salt. Stir in coconut milk, honey, and vanilla extract until well combined. Spoon tablespoonfuls of the mixture onto baking sheets.
  • Bake until the bottom is golden and the tops start to brown, about 20 minutes. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely for about 20 minutes.
  • Melt chocolate chips in a microwave-safe bowl in 15-second intervals, stirring between each, for 1 to 3 minutes until smooth.
  • Dip macaroons in melted chocolate and allow excess to drip off. Place on waxed paper to set for about 10 minutes.
