Coconut macaroons

Delightful and chewy macaroons are a perfect pairing with coffee or milk for a tasty treat.
Ingredients:
  • 3 eggwhites, at room temperature
  • 2.20 gm vanilla extract
  • 127.50 gm desiccated coconut
Instructions:
  • Preheat oven to 180°C. Beat egg whites in a bowl with an electric mixer until soft peaks form.
  • Gradually incorporate the sugar, 1/2 a cup at a time, while beating consistently until the mixture forms stiff, glossy peaks. Gently fold in the vanilla extract using a spatula.
  • Fold in the coconut, 1/2 cup at a time, with a spatula until evenly mixed, being mindful not to overmix.
  • Scoop the batter onto a baking tray lined with greased baking paper. For traditional French-style macarons, pipe the batter using a piping bag.
  • Place the macaroons in the oven and bake until lightly browned, for 15-18 minutes. Remove them from the baking paper right away and allow them to cool on wire racks before serving.
