Coconut-Cream Cheese Frosting

Decadent buttercream frosting with sweet coconut, topped with toasted coconut for an elegant finish.
Ingredients:
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups confectioners' sugar
  • 2 tablespoons heavy cream
  • 0.5 teaspoon salt
  • 0.5 teaspoon coconut flavoring
  • 1 teaspoon vanilla extract
  • 0.5 cup sweetened shredded coconut
  • 1 cup sweetened shredded coconut, toasted
Instructions:
  • In a mixer bowl, whip the cream cheese and butter until light and fluffy. Slowly incorporate the confectioners' sugar, one cup at a time, along with the heavy cream. Blend in the salt, coconut flavoring, and vanilla extract until smooth and spreadable. Adjust consistency by adding more confectioners' sugar for thickness or cream for a thinner frosting. Mix in the coconut and optionally sprinkle toasted coconut over the frosted cake.
