Indulgent Italian coconut cake with creamy coconut-cream cheese frosting and crunchy nuts.
Ingredients:
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 0.5 cup butter
  • 0.5 cup shortening
  • 2 cups white sugar
  • 5 large eggs
  • 1 cup flaked coconut
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour
  • 8 ounces cream cheese
  • 4 cups confectioners' sugar
  • 2 tablespoons light cream
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease three 9-inch round cake pans.
  • In a small bowl, mix together buttermilk and baking soda; set aside.
  • In a large bowl, use an electric mixer to cream together butter, shortening, and sugar until light and fluffy. Add eggs, buttermilk mixture, vanilla, coconut, baking powder, and flour; mix until just combined. Pour batter into the prepared pans.
  • Bake in the preheated oven for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool in the pans for 5 minutes, then transfer to a wire rack to cool completely for 20-25 minutes.
  • Prepare the frosting while the cakes cool: Using an electric mixer, whip cream cheese, butter, vanilla, and confectioners' sugar in a medium bowl until fluffy. Gradually mix in cream until you reach the desired texture. Gently fold in walnuts and coconut. Spread the frosting between cake layers and over the cooled cake's top and sides.
