Creamy potato-almond balls rolled in cinnamon for a delectable Irish treat.
Ingredients:
  • 2 cups whole almonds
  • 0.5 cup ground cinnamon, or more to taste
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.25 cup unsalted butter, softened
Instructions:
  • Grind almonds in a food processor until finely ground; then set aside.
  • Sprinkle cinnamon onto a plate with a rim and set it aside.
  • Using an electric mixer, blend cream cheese, butter, and vanilla in a large bowl until evenly mixed. Place the bowl in a larger pan filled with ice to help the mixture stiffen, ensuring it stays in the bowl.
  • Sift confectioners' sugar over the butter mixture, then add ground almonds and stir until well combined. Allow the mixture to chill on a bed of ice for 5 minutes.
  • Roll the mixture into delightful 1/2-inch balls, then coat them evenly with rich cinnamon. Chill in the refrigerator until firm, around 20 minutes.
