Coffee-infused layer cake with airy coffee frosting.
Ingredients:
  • 2 cups white sugar
  • 0.25 teaspoon salt
  • 1 cup butter
  • 3 tablespoons instant coffee granules
  • 1 cup boiling water
  • 0.5 cup buttermilk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 0.75 cup butter, softened
  • 3 cups confectioners' sugar
  • 1 tablespoon instant coffee granules, or more to taste
  • 2 tablespoons heavy cream, plus more as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch cake pans. Combine flour, white sugar, and salt in a large bowl, and mix well.
  • In a small saucepan, melt 1 cup of butter. In a bowl, mix 3 tablespoons of instant coffee with boiling water until dissolved. Pour the coffee mixture into the melted butter. Bring to a boil over medium heat, stirring for about 10 seconds. Allow the butter-coffee mixture to cool.
  • Combine buttermilk, eggs, vanilla extract, and baking soda in a bowl until the baking soda dissolves. Blend the cooled coffee mixture into the flour mixture, then delicately fold in the buttermilk mixture. Pour the batter into the cake pans.
  • Bake the cakes in the preheated oven until they are golden brown and a toothpick inserted into the center comes out clean, approximately 20 minutes. Let the cakes cool in the pans for 10 minutes before transferring to racks to cool completely.
  • Combine 3/4 cup of softened butter, confectioners' sugar, 1 tablespoon of instant coffee, and cream in a mixing bowl. Use an electric mixer on High speed until frosting is light and creamy. Add more cream, if needed, 1 teaspoon at a time, until the frosting is spreadable. Frost the cooled cake layers.
