Coffee creme brulee

Elevate creme brulee with a decadent coffee-infused twist.
Ingredients:
  • 300ml pouring cream
  • 20.00 ml instant coffee
  • 40.00 ml Kahlua
  • 5 egg yolks
  • 70g (1/3 cup) caster sugar
  • 20.00 gm raw caster sugar
Instructions:
  • Preheat your oven to 150C. In a saucepan over medium heat, gently heat up the cream, milk, and instant coffee until almost boiling.
  • In a heatproof bowl, combine Kahlua, egg yolks, and caster sugar, whisking until smooth.
  • Combine the cream mixture with the egg mixture and gently whisk until smooth. Strain the mixture into a jug and evenly pour into four 185ml ovenproof ramekins.
  • Arrange the ramekins in a roasting pan and carefully pour boiling water into the pan until it reaches halfway up the sides of the ramekins. Bake in the oven for 35 minutes or until the custard is just set.
  • Allow the custards to cool slightly, cover, then chill for 4 hours or until set. Sprinkle raw sugar over the top and use a blowtorch to caramelize.
