Coffee elevates indulgent desserts with rich flavor and enticing aroma.
Ingredients:
  • 1 1/2 tsp dried espresso coffee powder
  • 100g caster sugar
  • 2 eggwhites
  • 0.63 gm cream of tartar
  • 50g dark chocolate, melted
  • Double cream, to serve
Instructions:
  • Preheat your oven to 100°C and prepare an oven tray by lining it with baking paper.
  • Pass the coffee through a fine sieve to create a powder. Mix the coffee and sugar in a bowl. Use an electric mixer to beat the egg whites in a clean, dry bowl until soft peaks form. Gradually add sugar, one tablespoon at a time, whisking well after each addition, until the meringue is thick, glossy, and the sugar is fully dissolved. Fold in cream of tartar until just incorporated. Scoop the mixture into a piping bag with a 1cm-fluted nozzle. Pipe 3cm-round meringues onto the prepared tray. Bake for 30 minutes or until the meringues are dry to the touch. Turn off the oven and let them cool with the door slightly open.
  • Spread a touch of melted chocolate onto the base of each meringue using a small palette knife. Allow them to rest on a wire rack until the chocolate is set, about 30 minutes.
  • Spread a generous amount of cream over one meringue, then top with another meringue to create a sandwich. Repeat with remaining meringues and cream. Serve promptly for the best experience.
