Irresistible coffee meringue frosting for decadent chocolate cakes.
Ingredients:
  • 1.5 cups packed light brown sugar
  • 3 egg whites
  • 0.25 cup strong brewed coffee
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
Instructions:
  • Start by bringing water to a boil in the bottom of a large double boiler, then lower the heat to a simmer. In the top of the double boiler, mix brown sugar, egg whites, coffee, and cream of tartar. Use a mixer to beat the mixture for 5 to 7 minutes until stiff peaks form. Take it off the heat, add vanilla, and continue beating for another 3 minutes.
