Marble cake with chocolate frosting

Ingredients:
  • Melted butter, to grease
  • 200g butter, softened
  • 215g (1 cup) caster sugar
  • 3 eggs
  • 150g (1 cup) self-raising flour
  • 150g (1 cup) plain flour
  • 125ml (1/2 cup) milk
  • 2-3 drops red liquid food colouring
  • 10.00 gm cocoa powder, sifted
  • 100g soft butter
  • 300g (2 cups) icing sugar mixture
  • 10.00 gm cocoa powder
  • 41.20 gm milk
Instructions:
  • Preheat the oven to 180°C. Grease a 20cm square cake pan with melted butter and line it with non-stick baking paper.
  • In a medium bowl, use an electric beater to cream together butter, sugar, and vanilla essence until pale and creamy. Add eggs one at a time, beating well after each addition. In a separate bowl, sift together the flours. Set aside 2 tablespoons of milk. Mix half of the flour into the butter mixture, then add half of the milk. Repeat with the remaining flour and milk until fully combined.
  • Divide the cake batter into 3 bowls. Mix a few drops of red liquid food coloring into one bowl until thoroughly combined. In another bowl, blend the cocoa powder with the reserved milk and mix well.
  • Create a marble effect by spooning alternating mixtures into the prepared pan. Gently swirl them together using a spoon. Tap the pan to settle the mixture and smooth the surface. Bake in a preheated oven for 45-50 minutes until a skewer comes out clean when inserted into the center. Let it sit in the pan for 5 minutes, then cool on a rack.
  • In a large bowl, beat butter with an electric mixer until creamy. Sift in icing sugar and cocoa powder, then beat until combined. Mix in the milk until fluffy.
  • Use a round-bladed knife to create elegant swirls while spreading the frosting over the cake. Slice the cake and serve promptly.
