Indulgent liqueur-infused treats perfect for after-dinner cravings.
Ingredients:
  • 1 egg white
  • 55g (1/4 cup) caster sugar
  • 5.00 gm cocoa powder, sifted
  • 50g unsalted butter, at room temperature
  • 45g (1/4 cup) icing sugar mixture
  • 20.00 ml coffee liqueur (such as Kahlua)
Instructions:
  • Preheat the oven to 160°C and line 2 baking trays with non-stick baking paper. In a clean, dry bowl, use an electric beater to whip the egg white until stiff peaks form. Slowly add sugar, one tablespoon at a time, while whisking continuously until the mixture is thick and glossy. Gently fold in the cocoa powder.
  • Transfer the fluffy meringue into a piping bag with a 1.5cm round nozzle. Pipe small 2cm meringue rounds onto the lined trays, spaced 2cm apart. Bake for 30 minutes until crisp. Turn off the oven and let the meringues cool completely inside with the door slightly open for 1 hour.
  • In a medium bowl, use an electric beater to whip together the butter, icing sugar, and coffee liqueur until light and creamy, creating the coffee cream.
  • Take one meringue and generously spread it with coffee cream. Sandwich it with another meringue. Repeat this process with the rest of the meringues and coffee cream. Serve alongside a nice cup of coffee.
