Coffee shortbread

Enjoy these coffee shortbread with a piping hot beverage post-dinner or during tea time.
Ingredients:
  • 250g butter, at room temperature
  • 150g icing sugar
  • 3 tsp instant coffee
  • 15.00 gm water
  • 415g plain flour
  • Demerara sugar, to sprinkle
Instructions:
  • Preheat your oven to 180°C. Using an electric beater, cream 250g of room temperature butter with 1 cup (150g) of icing sugar until light and fluffy. Dissolve 3 teaspoons of instant coffee in 3 teaspoons of water, then mix it into the butter mixture.
  • Mix 2 3/4 cups (415g) plain flour until fully combined (don't worry if it looks crumbly at first - just keep stirring). Shape into walnut-sized balls and arrange on a baking tray lined with parchment paper.
  • Flatten the balls with a fork, then sprinkle demerara sugar. Bake until golden and crisp, about 15-20 minutes. Let cool before serving.
