Delicious homemade coffee walnut muffins, best enjoyed warm.
Ingredients:
  • 300g self-raising flour
  • 165g brown sugar
  • 55g walnut
  • 95g chocolate chips
  • 20.00 ml Instant Coffee Powder
  • 1 Free Range Egg, lightly whisked
  • 250ml buttermilk
  • 80ml vegetable oil
  • 1 tsp Instant Coffee Powder
  • 10.00 gm boiling water
  • 160g icing sugar mixture
Instructions:
  • Preheat your oven to 180C. Line a 12-hole muffin pan with paper cases that are 1/3 cup (80ml) in size. In a large bowl, mix together the flour, sugar, walnuts, and chocolate chips.
  • In a bowl, combine coffee and boiling water until coffee dissolves. Whisk in the egg, buttermilk, and oil. Gently fold in the flour mixture until just combined, being careful not to overmix.
  • Distribute the mixture evenly into the paper cases. Bake for 20-25 minutes or until a skewer comes out clean when inserted in the centers. Transfer to a wire rack to cool a bit.
  • Make the coffee icing by mixing coffee and boiling water in a bowl. Then, add icing sugar and stir until a smooth and runny paste forms, adding more water if needed. Drizzle the icing over the muffins and serve them warm or at room temperature.
