Flavorful and nutritious Korean tofu and vegetable dumplings.
Ingredients:
  • 1 cup cellophane noodles
  • 4 cups chopped cabbage
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 medium carrot, chopped
  • 1 tablespoon minced garlic
  • 1.5 teaspoons salt
  • 1 pinch ground black pepper
  • 1 tablespoon olive oil, or more as needed
  • 1 cup crumbled firm tofu
  • 2 tablespoons chopped scallions
  • 2 tablespoons sesame oil
  • 5 cups all-purpose flour
  • 1 cup beet juice
  • 1 large egg, beaten
  • 1 pinch salt
Instructions:
  • Fill a large pot with lightly salted water and bring to a rolling boil. Add noodles and cook until tender yet firm, around 6 to 7 minutes. Drain and dice.
  • Add cabbage, onion, bell pepper, carrot, garlic, salt, and pepper to a food processor bowl and pulse until finely diced.
  • Gently warm olive oil in a pan over medium-low heat. Cook the vegetable mixture in the fragrant oil, stirring often, until tender, around 6 minutes. Introduce tofu and cook for an additional 5 minutes.
  • Wrap the filling in cheesecloth and press out excess water. Then, mix it in a bowl with diced noodles, scallions, and sesame oil until fully combined.
  • Combine flour, vibrant beet juice, an egg, and a pinch of salt in a bowl. Knead until the dough is smooth and holds together well without being sticky.
  • Roll the dough until it's thin enough to be see-through but not transparent using a pasta machine at the second-thinnest setting. Cut out circles for dumpling wrappers using a 3 1/2-inch biscuit cutter. Repeat the process with excess dough until it's all used up.
  • Add a generous 2 teaspoons of filling in the middle of each dumpling wrapper. Fold the wrapper in half and firmly seal by pinching all the way across.
  • Set up a steamer in a saucepan filled with water, ensuring the water is below the steamer. Bring the water to a boil. Steam the dumplings in batches, covered, until heated through, for about 10 minutes.
