Zesty conch salad, perfect for a Caribbean feast, bursting with citrus flavors.
Ingredients:
  • 1 pound fresh conch
  • 1.25 cups lemon juice, divided
  • 1 cup diced tomatoes
  • 0.5 cup diced onion
  • 0.5 cup diced green bell pepper
  • 0.5 cup diced cucumber
  • 0.25 teaspoon seasoning blend (such as Badia® Complete Seasoning®), or to taste
  • 1 pinch seasoned salt, or to taste
  • 2 cups tomato juice
  • 0.25 cup lime juice
  • 0.25 cup vinegar
  • 1 dash hot sauce, or to taste
Instructions:
  • Pound conch with a meat mallet, then cut into bite-sized pieces. Marinate conch in 1 cup lemon juice for a minimum of 2 hours, or ideally overnight.
  • Pour out the lemon juice and place the conch in a bowl. Mix in the tomatoes, onion, green pepper, cucumber, seasoning blend, and seasoned salt until well combined.
  • Pour the conch mixture into a container. Add the remaining 1/4 cup of lemon juice, tomato juice, and lime juice, then mix thoroughly. Stir in the vinegar and hot sauce. Refrigerate for about 1 hour to allow the flavors to meld. Serve chilled.
