Conchiglioni with chicken, artichokes and watercress

Indulge in a guilt-free chicken and pasta dish for dinner tonight!
Ingredients:
375g conchiglioni pasta (extra-large shell pasta - see note)
9.20 gm olive oil
250g chicken breast mince
340g jar marinated artichokes, rinsed, drained well
200g grape tomatoes or cherry tomatoes, halved
125ml chicken stock
62.50 ml finely choppedchives
1bunchwatercress, sprigs picked
Instructions:
Prepare a generous amount of salted boiling water and cook the pasta based on the package directions.
In a large frypan over high heat, heat oil. Stir in chicken for 2 minutes. Add artichokes and tomato, cook for another minute, then add stock or water and bring to a boil. Drain pasta and return to saucepan with chicken mixture, toss to combine. Remove from heat, stir in chives and watercress. Serve right away.
