Whip up a delicious pasta dish with minimal ingredients for a quick and tasty meal!
Ingredients:
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp fennel seeds
  • 33.30 gm tomato paste
  • 4 (about 400g) pork sausages, casings removed
  • 400g can chopped tomatoes
  • 400g can lentils, rinsed, drained
  • 1/2 tsp chilli flakes
  • 250g conchiglioni pasta (large shell-shaped pasta - see note)
  • 50g parmesan
Instructions:
  • In a saucepan over medium-low heat, heat oil. Sauté onion and garlic until softened, about 5-6 minutes. Add fennel seeds and cook for 1 minute until fragrant. Mix in tomato paste and cook for 2 minutes. Add sausage meat and cook until browned, breaking up any lumps with a spoon. Incorporate chopped tomato, lentils, chilli, and 1/2 cup (125ml) water, then simmer for 25 minutes or until thickened, stirring occasionally. Season to taste.
  • Cook the pasta according to package directions until just tender. Drain.
  • Preheat the grill until it's hot. Place shells on a tray, fill them with sauce, add cheese on top, and grill for 2 minutes until cheese is nicely melted.
