Ingredients:
  • 8 beef sausages
  • 1 large brown onion, chopped
  • 4 rashers bacon, rind removed, chopped
  • 500.00 ml dried brown lentils, rinsed
  • 2 dried bay leaves
  • 765.00 gm chicken style liquid stock
  • 4 tomatoes, chopped
  • 125.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • Preheat the oven to 180°C. In a hot frying pan, brown the sausages in oil for 5 minutes, then transfer them to an ovenproof casserole dish.
  • In a pan, sizzle the flavors of onion, bacon, and garlic until tender, about 5 minutes. Mix in the lentils to coat, then add bay leaves and stock, bringing it to a boil. Pour this savory mixture over the sausages, cover, and let it all simmer together for 1 hour.
  • Place the tomatoes in the casserole dish, cover it, and cook for 30 minutes, or until the lentils are tender. Remove the casserole from the oven, discard the bay leaves, stir in the parsley, and season with salt and pepper before serving.
