Slow-roasting tomatoes enhances their natural sweetness.
Ingredients:
  • 2 x 200g punnets grape tomatoes
  • 10 sprigs fresh thyme
  • 2 garlic cloves, thinly sliced lengthways
  • 250ml (1 cup) extra virgin olive oil
Instructions:
  • Preheat the oven to 120°C. Arrange the tomatoes in a small ovenproof dish in a single layer. Sprinkle with thyme and garlic, then drizzle with oil.
  • Bake for 1 1/2-2 hours until the tomatoes slightly collapse, then transfer them to a sterilized jar and pour over the pan juices.
