French-style slow-cooked tomatoes bursting with intense flavor, a snap to make.
Ingredients:
  • 800g mixed baby tomatoes
  • 1 garlic bulb
  • 10 fresh thyme sprigs
  • 2 dried bay leaves
  • 750ml olive oil
Instructions:
  • Preheat the oven to 130°C/110°C fan forced. Arrange mixed baby tomatoes, halved crossways garlic bulb, fresh thyme sprigs, and bay leaves in a single layer in a 5cm-deep small roasting dish or pan. Drizzle with olive oil.
  • Roast until tomato slightly shrivels for about 1 hour and 30 minutes. Allow to cool completely before serving.
