Delicious crab cake-inspired zucchini fritters - a perfect use for excess zucchini!
Ingredients:
  • 2.5 cups grated zucchini
  • 2 tablespoons butter, melted
  • 1 cup seasoned bread crumbs
  • 0.25 cup minced onion
  • 1 teaspoon Old Bay Seasoning TM
  • 0.25 cup all-purpose flour
  • 0.5 cup vegetable oil for frying
Instructions:
  • Combine zucchini, egg, and butter or margarine in a large bowl. Add seasoned crumbs, minced onion, and seasoning. Mix thoroughly.
  • Form mixture into savory patties and coat them generously with flour.
  • Heat oil in a medium skillet over medium-high heat until hot. Fry patties until golden brown on both sides.
