Delicious In-N-Out Double-Double Burger with double beef patties cooked in mustard, caramelized onions, cheese, and special sauce.
Ingredients:
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon sugar
  • 3/4 teaspoon white vinegar
  • 1 tablespoon butter
  • 1 tablespoon canolaoil
  • 3 cups finely chopped yellow onions
  • ¾ teaspoons salt, divided
  • 4 tablespoons water,or as needed
  • 1 lb ground chuck or80% lean ground beef
  • 1 teaspoon canola oil
  • 1/2 teaspoon black pepper
  • 3 tablespoons mustard
  • 8 slices American cheese
  • 4 hamburger buns, toasted
  • 16 dill pickle chips
  • 4 slices tomato
  • 2 leaves iceberg lettuce, roughly torn
Instructions:
  • Combine mayonnaise, ketchup, relish, sugar, and vinegar in a small bowl to make the sauce.
  • In a nonstick skillet over medium heat, melt butter with 1 tablespoon oil. Add onions and sprinkle with ¼ teaspoon salt. Cook until onions are tender and golden brown, about 20 minutes, stirring occasionally. If the skillet dries out, add 1 tablespoon water. Keep cooking, stirring often, and adding 1 tablespoon water at a time until onions are very soft, deeply browned, and jammy, for an additional 10 to 15 minutes. You may not need to use all the water. Remove from heat.
  • Form the beef into 8 patties, each about 3/8-inch-thick and 4 inches wide, then sprinkle with pepper and the remaining 1/2 teaspoon salt.
  • In a large cast-iron skillet over medium-high heat, heat 1 teaspoon of oil. Add patties in batches if necessary. Spread 2 teaspoons of mustard over each patty. Cook until browned, approximately 2 minutes per side. Top with cheese and onions. Cover and cook for about 30 seconds until cheese is melted. Ensure the internal temperature reaches at least 160 degrees F (70 degrees C). Layer patties to form 4 stacks.
  • Spread a delicious layer of sauce onto the bottom of each bun, then generously assemble 4 pickles, a slice of tomato, crisp lettuce, and a stack of 1 patty on each bun.
