Recreate irresistible lemon bread at home using yellow cake mix, lemon pudding mix, and fresh lemon juice.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 2 (2.9 ounce) packages non-instant lemon pudding mix
  • 0.5 cup vegetable oil
  • 8 ounces sour cream
  • 6 tablespoons freshly squeezed lemon juice
  • 2.5 cups confectioners' sugar
  • 3 tablespoons freshly squeezed lemon juice, or more to taste
Instructions:
  • Prepare your ingredients. Preheat the oven to 350 degrees F (175 degrees C) and grease 2 loaf pans.
  • In a stand mixer bowl, add cake mix, pudding mix, oil, eggs, sour cream, milk, and 6 tablespoons of lemon juice. Beat for 2 minutes until well combined, then transfer the batter into the prepared loaf pans.
  • Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 20 minutes, then transfer to a wire rack to cool completely.
  • In a bowl, combine confectioners' sugar and 3 tablespoons of lemon juice, whisking until smooth. Spread the glaze evenly over the loaves and allow it to set for about 30 minutes before slicing.
