Whip up quick and delicious bacon Gruyère egg bites, a tasty homemade version of the popular Starbucks favorite, perfect for a fast and satisfying morning meal on the go.
Ingredients:
  • 6 slices thick-cut bacon, diced 1/2-inch thick
  • 9 large eggs, preferably room temperature
  • 3 ounces cream cheese, room temperature
  • 3/4 teaspoon kosher salt
  • 5 ounces Gruyère cheese, shredded (about 1 1/4 cups)
  • Ground black pepper, to taste
Instructions:
  • Preheat the oven to 325 degrees Fahrenheit.
  • To cook the bacon, add diced bacon to a cold cast-iron or nonstick skillet over medium heat. Cook for 8 to 10 minutes, stirring occasionally, until fully cooked but not yet crispy. Remove from heat, drain bacon on paper towels, and keep the rendered bacon fat for later use.
  • Whisk together eggs, cream cheese, and salt in a blender until smooth and slightly frothy, approximately 15 to 20 seconds.
  • Grease each well of your muffin tin generously with the rendered bacon fat using a paper towel. Divide the bacon and shredded Gruyère cheese evenly among the 12 wells. Fill each well about 3/4 full with the egg mixture, then quickly combine the ingredients using a butter knife. Sprinkle ground black pepper generously on top of each egg bite.
  • Bake the egg bites for 16 to 20 minutes until they are slightly loose in the center but completely set on the outsides, turning the pan halfway through to ensure even cooking. The melted Gruyère will make them appear slightly jiggly in the middle, but don't worry, they will continue to set up as they cool.
  • To serve or store the egg bites: Take the cooked egg bites out of the oven, gently loosen the edges with a butter knife, let them cool slightly, and enjoy warm.
