Coriander and chilli prawn cocktail

Spicy prawn cocktail with red chillies and fresh coriander.
Ingredients:
  • 1kg cooked king prawns, peeled, deveined, tails intact (see tip)
  • 60g spinach leaves
  • 123.75 gm mayonnaise (see notes)
  • 31.50 gm lime juice
  • 20.00 gm boiling water
  • 125.00 ml chopped fresh coriander
  • 1 small red chilli, deseeded, finely chopped
Instructions:
  • Combine mayonnaise, lime juice, and water in a bowl. Mix in chopped coriander and chilli, stirring until well combined.
  • Add succulent prawns and mix well. Chill in the fridge for a minimum of 30 minutes, or up to 4 hours for even more flavorful results.
  • Distribute spinach leaves evenly into individual bowls. Arrange coriander and spicy prawns on top. Serve and enjoy.
