Corn, Pork and Bean Bundles

30-minute Grilled Pork with Beans and Corn Dinner.
Ingredients:
  • 3/4 lb boneless pork loin chops, cut into 2x1/4-inch strips
  • 1 can (15 oz) red beans, rinsed
  • 1/2 cup barbecue sauce
  • 1 cup frozen whole kernel corn (from 1-lb bag), thawed
  • 4 thin slices onion
Instructions:
  • Preheat gas or charcoal grill. Cut 4 large sheets of foil. In a medium bowl, combine pork, beans, and barbecue sauce. Divide mixture onto foil sheets. Sprinkle corn evenly over pork. Top with onion slices.
  • Gather the short sides of the foil together to create bundles and make multiple 1-inch folds. Seal the open edges of the foil by folding.
  • Once the grill is hot, place the bundles on a gas or charcoal grill over medium heat. Cover and cook for 18 to 20 minutes until the pork is no longer pink in the center. Open the bundles carefully to release the steam.
