Cheesy nacho balls recipe

Cheesy pork and bean air-fryer bites with crunchy corn chip coating.
Ingredients:
  • 500g pork mince
  • 400g can black beans, rinsed, drained
  • 300g can corn kernels, drained
  • 35g pkt nachos spice mix
  • 50g (1 cup) panko bread crumbs
  • ½ cup chunky tomato salsa
  • 40g (¼ cup) plain flour
  • 20.60 gm milk
  • 230g cheesy nachos corn chips, finely crushed
  • 40.00 gm butter
  • 40.00 ml plain flour
  • 350ml milk
  • 250g pkt Mexican inspired cheese blend
  • Pinch of cayenne pepper (optional)
Instructions:
  • Mix together ground beef, kidney beans, corn, taco seasoning, breadcrumbs, salsa, and one egg in a large bowl. Shape 1 tablespoon of the mixture into a ball and place it on a plate. Continue rolling balls with the rest of the mixture.
  • 1. Spread flour on a plate. Beat the egg in a dish with a fork. Spread the corn chips on a plate. Coat each ball in flour, then egg, then corn chips. Repeat for the rest of the balls. Place on a baking tray.
  • Coat the balls evenly with oil and air fry in batches until crispy, about 10 minutes.
  • In a large saucepan over medium heat, melt butter. Stir in flour and whisk until a loose paste forms. Pour in milk and whisk until well combined. Bring to a boil, then add cheese and cayenne pepper (if using), whisk until smooth.
  • Present meatballs alongside flavorful dipping sauce for a delicious combination.
