Cheesy nacho chicken and pork layered with sour cream on crispy tortilla chips for a delicious and quick dinner.
Ingredients:
  • cooking spray
  • 4 cups nacho cheese-flavored tortilla chips (such as Doritos®), crushed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 green bell pepper, chopped
  • 1 (4 ounce) can diced green chile peppers
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup shredded pepperjack cheese
  • 0.25 cup sour cream
  • 1 pound ground pork
  • 1 pound ground chicken
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch casserole dish with cooking spray.
  • Combine crushed tortilla chips, tomatoes, cream of chicken soup, green bell pepper, green chile peppers, 1/2 cup Cheddar cheese, and 1/2 cup pepperjack cheese in a large bowl and mix well.
  • Heat a large skillet over medium-high heat until sizzling. Cook and stir ground pork until it's crumbly and no longer pink, for approximately 10 minutes. Transfer the cooked pork to the tortilla chip mixture, keeping the flavorful drippings in the skillet.
  • Brown ground chicken in the flavorful drippings until perfectly crumbly and cooked through, approximately 10 minutes. Combine the cooked chicken with the pork-tortilla chip mixture, ensuring everything is well mixed. Spread the mixture into the prepared casserole dish and generously sprinkle with 1/2 cup each of Cheddar and pepperjack cheese.
  • Bake in the hot oven until the casserole is bubbly and the cheeses are melted, approximately 30 minutes. Let the casserole cool for 5 to 10 minutes before serving.
