Corn and capsicum salsa

Herb-infused side dish with zesty dressing, perfect for pairing with BBQ meats.
Ingredients:
  • 420g can five-bean mix, rinsed, drained
  • 420g can corn kernels, drained
  • 1 red capsicum, seeded, cut into 5mm pieces
  • 1 green capsicum, seeded, cut into 5mm pieces
  • 1 celery stick, trimmed, cut into 5mm pieces
  • 1/4 small red onion, finely chopped
  • 42.00 gm fresh lime juice
  • 36.40 gm extra virgin olive oil
  • 1/2 bunch fresh coriander, stems and leaves chopped
  • 2 avocados, flesh coarsely chopped
Instructions:
  • Mix together the beans, corn, bell peppers, celery, onion, lime juice, oil, and most of the coriander. Season with salt and pepper to taste.
  • Garnish with sliced avocado and the remaining fresh cilantro leaves.
