Ingredients:
  • 10.00 gm Cajun seasoning
  • 4 (about 150g each) beef scotch fillet steaks
  • 18.20 gm olive oil
  • 1 x 130g pkt Couscous Mediterranean Vegetables & Herbs
  • 1 small red capsicum, halved, deseeded, finely chopped
  • 1 long fresh red chilli, halved, deseeded, finely chopped
  • 4 shallots, ends trimmed, thinly sliced
  • Baby rocket leaves, to serve
Instructions:
  • Spread Cajun seasoning over a plate, add the beef and gently coat. Preheat a large chargrill on high and lightly brush with oil. Cook the beef for 3 minutes on each side for medium or until desired doneness. Transfer to a plate, cover loosely with foil, and let rest for 5 minutes before serving.
  • Prepare the couscous as instructed on the packet.
  • After letting the couscous sit, heat the rest of the oil in a large frying pan over high heat. Sauté the corn, capsicum, and chilli for 3 minutes until the corn is golden and the capsicum is soft. Take it off the heat, mix in the shallot and lime juice, and season with salt and pepper to taste.
  • Spoon the couscous into serving dishes and layer with the beef, salsa, and rocket. Accompany with lime wedges for serving.
