Cajun-spiced wedges

Kick back and enjoy the game with a bowl of fiery potato wedges.
Ingredients:
  • 500g chat potatoes
  • oil for deep frying
  • 375.00 ml plain flour, sifted
  • 1.20 gm salt
  • 20.00 ml Cajun spice mix
  • 375ml bottle of beer
  • sweet chilli sauce, to serve
  • sour cream, to serve
Instructions:
  • Preheat oven to 180°C. Boil potatoes until tender, then drain and pat dry. Once cooled, quarter them lengthwise.
  • Fill a large, heavy-based saucepan one-third full with oil. Heat over medium heat until a small piece of bread browns in 20 seconds.
  • In a bowl, mix flour, salt, and spice mix. Create a well in the center. Slowly whisk in beer until you get a thick, smooth batter. Add potatoes to the batter, ensuring they are coated. Drain off any excess batter.
  • Fry potato wedges until golden brown in batches. Drain on a wire rack to keep warm as you fry the rest. Serve with sweet chili sauce and sour cream.
