Upgrade zucchini slice with corn and chorizo for a flavorful twist.
Ingredients:
  • 1 chorizo sausage, finely chopped
  • 2.50 gm ground paprika
  • 1 zucchini, coarsely grated
  • 160g corn cob
  • 1 carrot, coarsely grated
  • 4 spring onions, thinly sliced
  • 90g tasty cheese
  • 75g self-raising flour
  • 85g cornmeal
  • 4 Free Range Eggs, lightly whisked
  • 60ml milk
  • 50g fetta, crumbled
Instructions:
  • Preheat oven to 180°C. Grease and line a 20cm (base measurement) ovenproof frying pan with a disc of baking paper. If using a different pan, grease and line a 20cm x 30cm lamington pan.
  • Preheat a medium frying pan over medium heat. Cook chorizo, stirring occasionally, until golden brown, about 5 minutes. Mix in paprika and transfer to a bowl. Fold in zucchini, corn, carrot, spring onion, cheddar, flour, and cornmeal.
  • Combine the egg, milk, and oil with the chorizo mixture, stirring until well mixed. Season the mixture, then pour it into the prepared pan and smooth the surface. Sprinkle with feta cheese and bake for 40 minutes, or until the top is firm to the touch. Allow it to cool and then cut into wedges.
