Revitalize frozen veggies in a vibrant salad.
Ingredients:
  • 18.20 gm olive oil
  • 1 chorizo, quartered lengthways, thinly sliced
  • 1 small red onion, thinly sliced
  • 1.25 gm smoked paprika
  • 625.00 ml frozen peas and corn
  • 200g cherry tomatoes, halved
  • 82.50 ml chopped fresh coriander leaves
  • 21.00 gm lime juice
Instructions:
  • - Heat oil in a large frying pan over medium heat. Cook chorizo until golden, then add onion and paprika, cooking until softened. Stir in frozen peas and corn, cooking until tender and heated through. Remove from heat.
  • Combine the tomatoes, fresh coriander, and zesty lime juice. Season generously with salt and pepper. Mix everything together well. Serve and enjoy!
