Warm green pea & garlic dip

Delicious spinach dip pairs perfectly with roasted vegetables and crispy chips.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 1 small white onion, halved, finely chopped
  • 1 large garlic clove, finely chopped
  • 1/4 tsp ground turmeric
  • 230g (1 1/2 cups) fresh peas or thawed frozen peas
  • 60ml (1/4 cup) vegetable liquid stock
  • Salt & freshly ground black pepper
  • 1 green shallot, end trimmed, finely chopped
  • 4.60 gm extra virgin olive oil, extra
  • Steamed asparagus, to serve
  • Steamed snow peas, to serve
  • Vegetable chips, to serve
Instructions:
  • In a saucepan over medium heat, warm the oil. Sauté the onion for 5 minutes until softened. Stir in the garlic and turmeric, cook for 30 seconds until fragrant.
  • Combine the peas and stock in a pot and bring to a gentle simmer. Cook with the lid partially on for 4-5 minutes until the peas are tender yet vibrant green. Remove from heat and let it cool for 10 minutes before using.
  • Blend the pea mixture in a food processor until coarsely pureed. Alternatively, use a hand blender in the pan. Season with salt and pepper, then mix in the green shallot. Transfer the dip to a serving bowl, drizzle with extra oil, and serve with steamed asparagus, snow peas, and beetroot, kumara & potato crisps.
