Green bean salad with bacon vinaigrette: Fresh beans in a savory bacon dressing. A must-make warm side dish for bacon lovers.
Ingredients:
  • 1 pound fresh green beans, ends trimmed
  • 3 slices bacon, cut into 1/2-inch slices
  • 1/2 red onion, halved and thinly sliced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • salt and freshly-ground pepper to taste
  • 1 hard boiled egg, quartered (optional)
  • 4 fresh lemon wedges
Instructions:
  • 1. In a generously salted pot of boiling water, add green beans and cook until they turn vibrant green and are tender-crisp, which should take about 4 to 5 minutes - be careful not to overcook. 2. Drain the green beans, give them a quick rinse with cold water, and set them aside.
  • Cook bacon pieces in a skillet over medium heat until crispy. Transfer bacon to a paper towel to drain, keeping the flavorful drippings in the skillet.
  • Sauté onions until tender, then mix in red wine vinegar, Dijon mustard, and honey.
  • Combine fresh green beans and crispy, cooked bacon in the skillet and mix thoroughly. Season with salt and pepper to your liking.
  • Garnish with lemon wedges and a sliced hard-boiled egg before serving warm.
