Classic three bean salad with green beans, wax beans, kidney beans, tossed in warm vinaigrette, marinated overnight for enhanced flavor.
Ingredients:
  • 1 (16 ounce) can green beans, drained
  • 1 (16 ounce) can yellow wax beans, drained
  • 1 (16 ounce) can red kidney beans, drained
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 1 (4 ounce) jar chopped pimento peppers, drained
  • 0.5 cup vinegar
  • 0.5 cup vegetable oil
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
Instructions:
  • Combine the green beans, yellow wax beans, kidney beans, onion, celery, green bell pepper, and pimento peppers in a mixing bowl.
  • In a saucepan, quickly blend vinegar, oil, sugar, salt, and pepper and bring to a boil. Stir continuously until sugar dissolves, approximately 5 minutes. Remove from heat and drizzle the warm dressing over the beans; gently mix to cover evenly. Chill for 8 hours or overnight to meld flavors.
