Ingredients:
  • 1 420g can soya beans, rinsed, drained
  • 1 300g can butter beans, rinsed, drained
  • 1 300g can red kidney beans, rinsed, drained
  • 250g (1 punnet) small cherry tomatoes, quartered
  • 60ml (1/4 cup) red wine vinegar
  • 18.20 gm extra virgin olive oil
  • 1 garlic clove, crushed
  • 45g (about 5 small) drained gherkins, finely chopped
  • Salt & ground black pepper, to taste
Instructions:
  • Mix together the soybeans, butter beans, kidney beans, and tomatoes in a large bowl.
  • In a small bowl, combine vinegar, oil, garlic, gherkins, salt, and pepper. Whisk until well blended.
  • Combine the dressing with the beans and toss until well mixed.
