Corn and Crab Bisque

Delicious corn and crab bisque with a kick of Cajun spices, ready in no time!
Ingredients:
  • 0.25 cup butter
  • 0.75 cup onion, chopped
  • 3 (14 ounce) cans chicken broth
  • 3 cloves garlic
  • 2 bay leaves
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon Cajun seasoning
  • salt and pepper to taste
  • 4 ears corn, kernels cut from cob
  • 0.5 cup half-and-half
  • 3 tablespoons all-purpose flour
  • 0.5 cup milk
  • 16 ounces fresh lump crabmeat
Instructions:
  • In a large pot over medium heat, melt butter. Add onion, cook until soft. Pour in chicken broth, bring to a boil. Add garlic, bay leaves, cayenne pepper, Cajun seasoning, salt, and pepper. Mix in corn. Simmer for 10 minutes, then reduce heat to medium-low.
  • Take out 1 cup of soup and let it cool a bit. Transfer it to a food processor, then add the half-and-half. Blend for 30 to 45 seconds and keep it aside.
  • Combine flour and milk in a small bowl. Gradually incorporate into simmering soup. Stir constantly and simmer for 1 to 2 minutes. Finally, swirl in the pureed mixture.
  • Lower the heat and gently fold in the luscious crab meat, allowing it to heat through for approximately 5 minutes until irresistibly delicious.
