Elevate your dinner with homemade gourmet fritters.
Ingredients:
  • 3 corn cobs, husks and silks removed
  • 230g pea
  • 225g self-raising flour
  • 2 eggs, lightly whisked
  • 125ml milk
  • 250g ctn creme fraiche
  • 100g salmon roe
  • Dill sprigs, to serve
Instructions:
  • Cut the kernels from the cobs with precision. Boil in a saucepan for 2 minutes. Introduce peas and cook for 1 minute until tender. Then, cool in cold water and drain thoroughly.
  • In a large bowl, create a well in the center of the flour. Add the egg and milk, then stir gently, gradually incorporating flour until a smooth batter forms. Cover with plastic wrap and let it rest for 30 minutes.
  • Mix in the corn and peas into the batter, ensuring everything is well combined. Then, season with salt and pepper to taste.
  • In a large non-stick frying pan over medium heat, heat a small amount of oil. Spoon four 1/4-cup portions of batter around the pan, leaving space for spreading. Cook until bubbles appear on the surface and the fritter is golden on the bottom, about 1-2 minutes. Flip with a spatula and cook for another 1-2 minutes until fully cooked. Transfer to a plate. Repeat the process with the remaining batter and oil in two more batches, making sure to reheat the pan between batches.
  • Arrange the fritters elegantly on a serving platter, spoon a touch of creme fraiche on top, sprinkle with salmon roe, and garnish with fresh dill. Serve right away for the ultimate enjoyment.
