Ingredients:
  • 3 corn cobs, husks and silks removed
  • 230g pea
  • 225g self-raising flour
  • 2 eggs, lightly whisked
  • 125ml milk
  • 250g ctn creme fraiche
  • 100g salmon roe
  • Dill sprigs, to serve
Instructions:
  • Carefully cut kernels off the cobs. Boil them in water for 2 minutes. Then, toss in peas and cook for 1 minute until tender. Rinse in cold water and drain thoroughly.
  • In a large bowl, create a well in the center of the flour. Add the egg and milk, then gently stir while gradually incorporating flour until a smooth batter forms. Cover the bowl with plastic wrap and let it rest for 30 minutes.
  • Combine the corn and peas into the batter, giving it a gentle stir. Finish by seasoning with salt and pepper.
  • In a large non-stick frying pan over medium heat, heat a small amount of oil. Scoop four 1/4-cup portions of batter onto the pan, ensuring space for spreading. Cook for 1-2 minutes until bubbles form on the surface and the fritter is golden brown underneath. Flip with a spatula and cook for another 1-2 minutes until fully cooked. Transfer to a plate. Repeat with the rest of the batter and oil in two more batches, reheating the pan each time.
  • Arrange the fritters on a platter, swirl some creamy creme fraiche on top, generously sprinkle with luxurious salmon roe, and garnish with fresh dill sprigs. Serve promptly to enjoy the exquisite flavors.
