Ingredients:
  • 125.00 ml canned corn kernels, drained
  • 187.50 ml tasty cheese, grated
  • 30.00 ml chives, chopped
  • 75.08 gm olive oil
  • 2 eggs
  • 193.13 gm milk
  • 500.00 ml plain flour, sifted
  • 12.00 gm baking powder
Instructions:
  • First, preheat your oven to 180°C. Then, in a large bowl, mix together 1/2 cup drained, canned corn kernels, 3/4 cup grated tasty cheese, 1 1/2 tablespoons chopped chives, 1/3 cup olive oil, 2 eggs, and 3/4 cup milk. Gradually add 2 cups sifted plain flour and 3 teaspoons baking powder, gently folding until just combined.
  • Divide the mixture evenly into two lightly greased 12-hole mini muffin pans. Bake for 20 minutes or until they turn golden. Enjoy warm or chilled.
