Cozy up with a comforting, affordable corn chowder that's perfect for chilly nights.
Ingredients:
  • 20.00 gm butter
  • 2 brown onions, chopped
  • 250g bacon, rind removed, finely chopped
  • 62.50 ml plain flour
  • 772.50 gm milk
  • 510.00 gm chicken style liquid stock
  • 1kg frozen corn kernels
  • 500g unpeeled Desiree potatoes, cut into 2cm cubes
  • 40.00 ml lemon thyme leaves
Instructions:
  • In a large saucepan over medium heat, melt butter. Add onion and bacon; cook until onion is tender (3-4 minutes). Stir in flour and cook for 1 minute. Mix milk and stock; slowly pour into the bacon mixture while stirring until well combined.
  • Bring to a gentle boil while occasionally stirring. Add corn, potatoes, thyme, salt, and pepper. Bring back to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 15 to 20 minutes until thickened and heated through. Season with salt and pepper to taste. Serve.
