Indulge in rich and creamy Corn Chowder, a cozy favorite ready in just 35 minutes. Perfect as a side, starter, or quick lunch option.
Ingredients:
  • 1/2 pound bacon, chopped
  • 1 medium onion, chopped (1/2 cup)
  • 2 medium stalks celery, chopped (1 cup)
  • 2 tablespoons all-purpose flour
  • 4 cups milk
  • 1/8 teaspoon pepper
  • 1 can (14.75 oz) cream-style corn
  • 1 can (15 oz) tiny whole potatoes, drained and diced
  • Chopped fresh parsley, if desired
  • Paprika, if desired
Instructions:
  • In a 3-quart saucepan, sizzle the bacon over medium heat for 8-10 minutes until crispy, stirring occasionally. Save 3 tablespoons of that delicious bacon fat in the saucepan. Transfer the cooked bacon to a paper towel to drain, setting it aside for later.
  • In a sizzling pan, sauté the onion and celery in the savory bacon fat until tender, around 5 minutes. Sprinkle in the flour and stir continuously over medium heat until the mixture becomes bubbly; then take it off the heat.
  • Slowly pour in the milk while stirring continuously. Bring the mixture to a boil, stirring constantly. Let it boil for 1 minute while stirring.
  • Combine the pepper, corn, and potatoes in the pot. Cook until hot and slightly thickened. Add in the bacon. Serve each portion sprinkled with parsley and paprika.
