Corn fritters with smoked salmon

Ingredients:
  • 165.00 ml plain flour
  • 75.00 gm self-raising flour
  • 2 eggs, lightly beaten
  • 128.75 gm milk
  • 250.00 ml frozen corn kernels
  • 125.00 ml grated cheddar cheese
  • 40.00 ml finely chopped fresh chives
  • 40g butter, chopped
  • 100g sliced smoked salmon
  • 58.75 gm sour cream
  • finely chopped fresh chives, to serve
Instructions:
  • Sift flours into a bowl. Mix eggs and milk in a jug. Slowly whisk the egg mixture into the flour until a thick batter forms. Add corn, cheese, and chives, then stir well. Cover and let it rest for 20 minutes.
  • In a large non-stick frying pan over medium-high heat, melt some butter. Spoon 2 tablespoons of batter for each fritter, cook for 3 minutes on each side until golden and cooked through. Place on a paper towel-lined plate, cover to keep warm. Repeat with the rest of the butter and batter to make a total of 12 fritters.
  • Plate the fritters evenly. Add a generous serving of salmon, a dollop of sour cream, and a sprinkle of chives. Finish with a pinch of salt and pepper. Serve immediately.
