Whip up a vibrant summer corn relish with fresh veggies for a tasty twist on preserving the season's bounty.
Ingredients:
  • 8 ears corn, husked and cleaned
  • 2 pounds tomatoes - peeled, seeded, and coarsely chopped
  • 1.5 cups chopped green bell peppers
  • 0.75 cup chopped red bell pepper
  • 1 cup chopped onion
  • 0.5 cucumber, chopped
  • 2 cups apple cider vinegar
  • 1 teaspoon mustard seed
Instructions:
  • Prepare fresh corn by slicing off kernels. Then use a large spoon to scrape the cobs to extract any remaining juices.
  • Combine corn, along with all the flavorful juices, in a large saucepan. Add in tomatoes, green bell peppers, red bell peppers, onion, and cucumber.
  • In a medium bowl, mix apple cider vinegar, sugar, salt, celery seed, and mustard seed. Pour this flavorful mixture over the vegetables in the saucepan. Allow it to come to a boil, then simmer on low heat for 1 hour.
  • Fill hot, sterilized jars with relish, leaving 1/4 inch of space at the top. Remove air bubbles by running a clean knife around the inside of the jars. Wipe rims with a moist paper towel. Seal with sterile lids and screw rings on tightly before refrigerating until serving.
