Corn relish dip cheese log recipe

Wow your guests with this simple, homemade cheese log!
Ingredients:
  • 82.50 ml corn relish
  • 250g cream cheese, softened
  • 82.50 ml finely grated tasty cheese
  • 125.00 ml finely chopped fresh flat-leaf parsley leaves
  • 62.50 ml finely chopped fresh basil leaves
  • 20.00 ml finely chopped fresh oregano leaves
  • Crackers, to serve
Instructions:
  • Strain corn relish in a fine sieve. Press mixture through sieve into a bowl using the back of a spoon, reserving solids and sauce. In a bowl, beat cream cheese with an electric mixer until smooth. Mix in corn relish solids and tasty cheese. Season and beat until just combined.
  • Spread mixture onto a 25cm long piece of baking paper to create a 15cm long log. Roll up tightly using the paper as a guide and twist the ends to secure. Chill in the refrigerator for 2 hours until slightly firm.
  • Take the log off the paper. Brush the log with a bit of the saved sauce. Get rid of the sauce left in the bowl. Mix parsley, basil, and oregano in a bowl. Spread onto a plate. Roll the log in the herb mixture to cover it completely, including the ends. Chill in the refrigerator for 30 minutes or until solid.
  • Take the log out of the fridge and let it come to room temperature for 10 minutes before serving with crackers.
