Corn- and Pepper-Stuffed Zucchini

Try this delicious corn and pepper stuffed zucchini - a quick and delightful side dish. Ready in 15 minutes!
Ingredients:
  • 4 small zucchini (about 6 inches long)
  • 1 tablespoon water
  • 3/4 cup frozen (thawed) whole kernel corn or cooled cooked fresh corn kernels
  • 2 tablespoons diced red bell pepper
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried basil leaves
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 2 teaspoons olive or canola oil
  • 1/8 teaspoon salt
Instructions:
  • Halve the zucchini lengthwise and place it in a microwavable dish measuring 11x7x1 1/2 inches with some water. Cover the dish with plastic wrap, leaving a small opening to vent steam.
  • Microwave the zucchini on high for 3 to 5 minutes until crisp-tender. Once cooled, hollow out the centers of the zucchini, leaving 1/4-inch thick shells. Dispose of the centers.
  • Combine all the ingredients and fill each zucchini shell with approximately 2 tablespoons of the corn mixture.
