Microwave stuffed peppers with savory rice, bean, corn filling, and gooey melted cheese - a quick and delicious dinner option.
Ingredients:
  • 2 large red bell peppers, halved and seeded
  • 1 (8 ounce) can stewed tomatoes, with liquid
  • 0.33333334326744 cup quick-cooking brown rice
  • 2 tablespoons hot water
  • 0.5 (15 ounce) can kidney beans, drained and rinsed
  • 0.5 cup frozen corn kernels, thawed and drained
  • 2 green onions, thinly sliced
  • 0.25 teaspoon crushed red pepper flakes
  • 0.5 cup shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • Place the pepper halves in a 9-inch square glass baking dish and cover it with plastic wrap, making a few holes to allow steam to escape. Microwave until tender, approximately 4 minutes. Keep aside.
  • Combine juicy tomatoes, fragrant rice, and piping hot water in a microwave-safe bowl of medium size. Seal the bowl with plastic wrap and heat in the microwave until the rice reaches desired tenderness, which should take around 4 minutes.
  • Peel off plastic wrap gently. Mix in kidney beans, corn, green onions, and red pepper flakes. Cover the bowl again with plastic wrap. Microwave until warm, for about 3 minutes.
  • Evenly distribute the hot tomato mixture among the pepper halves. Cover the baking dish with plastic wrap, poking holes for ventilation. Microwave for 4 minutes.
  • Uncover the stuffed peppers and generously top them with a blend of melted mozzarella and Parmesan cheese. Let it sit until the cheese becomes gooey and irresistible, which should take about 1 to 2 minutes.
