Try these quick and delicious Greek stuffed peppers for a fun twist on weeknight dinner.
Ingredients:
  • 500g Lamb Mince
  • 15.00 gm Greek seasoning
  • 2 x 250g pkts 7 Ancient Grains microwavable brown rice
  • 4 red capsicums, halved and seeded leaving stem attached
  • 200g Tzatziki Dip
Instructions:
  • Preheat oven to 180°C. Cook mince in a large non-stick pan over medium-high heat, stirring with a wooden spoon to break up any lumps, for 5 minutes or until it changes color.
  • Sprinkle in the fragrant Greek seasoning and sauté for 1 minute. Mix in the rice until fully incorporated and warmed. Adjust seasoning to taste.
  • - Arrange capsicum halves, cut-side up, in a roasting pan. - Fill each capsicum half evenly with the mince mixture. - Lightly cover with foil and bake for 40 minutes until capsicum is tender. - Uncover and bake for an additional 10 minutes until golden brown. - Serve on plates, topped with tzatziki, and season to taste.
