Mouthwatering Greek-style stuffed peppers packed with savory lamb, rice, herbs, feta cheese, tomatoes, and creamy tzatziki.
Ingredients:
  • 0.5 cup long grain white rice
  • 1 cup water, or as needed
  • 0.33333334326744 cup minced yellow onion
  • 1 clove garlic, minced
  • 2 teaspoons minced fresh rosemary
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon minced fresh oregano
  • 1 teaspoon minced fresh dill
  • 0.5 teaspoon ground coriander
  • 1 teaspoon kosher salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 1 pound ground lamb
  • 2 green bell peppers
  • 0.25 cup tzatziki sauce, or more to taste
  • 0.5 cup crumbled feta cheese
  • 0.5 cup chopped fresh tomatoes
Instructions:
  • Preheat the oven to 375°F (190°C).
  • In a container, soak 1/2 cup of rice in water for 15-20 minutes. Drain thoroughly before using.
  • In a large bowl, mix together onion, garlic, rosemary, parsley, oregano, dill, coriander, salt, and pepper. Add ground lamb and drained rice, then blend thoroughly with your hands until evenly combined.
  • Halve the bell peppers lengthwise and remove the membranes and seeds. Fill each pepper half evenly with the lamb mixture. Place the stuffed peppers in a shallow baking dish.
  • - Bake in the preheated oven for about 40 minutes until the filling is cooked through, reaching an internal temperature of 160°F (71°C) when tested with an instant-read thermometer. - Allow the dish to cool slightly, then top with tzatziki as desired. - Garnish by sprinkling feta cheese crumbles and chopped tomatoes evenly over the stuffed peppers before serving.
